Spiraled Cucumber Greek Salad

I have slowly been teaching myself to enjoy salads because I know they are good for me. Honestly, it hasn’t been easy, but I did figure out a few things about me in the process of doing so. I learned that I am not a huge fan of lettuce-based salads. I learned that I like fruit or something sweet in many of my salads such as my Arugula, Cantaloupe and Goat Cheese Salad with Microgreens.

The other think I know about myself is that I love kalamata olives and feta cheese – any day of the week! Now this recipe of course has both. Being a lettuce-free version of the delicious classic Greek salad, I fell in love with this recipe. In fact, a few days after I first tried it, I rushed back to the store to stock up again on ingredients to make it again. Instead of lettuce and sliced cucumber, we use a whole spiraled cucumber and hold the lettuce. I leave the skin on (but you are more than welcome to peel yours first) and simply spiral from one end to the other with your SpiraLife vegetable spiralizer. This salad is extremely refreshing!

It is especially delicious with the Champagne Vinaigrette we use. It has a touch of sweetness and just the right amount of vinegar to oil ratio. Mix up a batch for the week. It goes great with so many things and I much prefer it to classic Greek dressing in this recipe, so I highly recommend you give it a try. But if you are partial to your Greek dressing, feel free to use that.

This delicious salad recipe is a refreshing spin on the Greek classic!

Ingredients
  • 1 hothouse or English cucumber
  • ¼ red onion, very thinly sliced
  • ¼ cup kalamata olive slices
  • 8-10 cherry tomatoes, halved
  • ¼ cup feta cheese crumbles
  • 1 grilled chicken breast (optional)
  • 2 tablespoons Champagne Vinaigrette
Instructions
  1. Spiralize your cucumber with your SpiraLife vegetable spiralizer.
  2. Add your onions, olives, tomatoes, feta cheese and chicken if using.
  3. Drizzle on your vinaigrette and enjoy!
Notes
For less watery cucumbers choose hothouse, Persian or English cucumbers These have less water and seeds for firmer noodles.
