Spiralized Apple Fennel Salad

I love a refreshing salad and this is that salad! This Spiralized Apple Fennel Salad is great as a snack on its own or as a side, especially one accompanying a pork chop or ribs. Think a replacement to coleslaw.

Spiralized Apple Fennel Salad with Apples

A real trick to this one is to get really firm apples, the firmer the better. The Lemon Poppy Seed Dressing this salad is tossed in is bright, with a touch of tang from the Dijon mustard and a touch of honey’s sweetness. Just right.

A Homemade Salad

Now, let me tell you a little about the fennel in this recipe. One of my favorite parts of this salad is the fennel. It is fresh, crisp and with a delicate crunch. Fennel has an anise or licorice flavor, which I generally do not like. But I acquired a favor for fennel after trying a recipe from Molly Wizenberg’s memoir/cookbook A Homemade Life. That recipe was Fennel Salad with Asian Pear and Parmesan. It was a very simple salad but very fresh. I highly recommend A Homemade Life to anyone who loves quick, fresh recipes with sparse, simple ingredients. I go back to that book time and again and the memoir portion makes you fall in love with food, family and life all over again. I love that book. Love, love, love it!

The Trick to Loving Salads

This spiralized apple salad, as with all salads is great because you can toss in whatever add-ins meet your fancy. Substitute pecans for the walnuts, chia seeds for flax, sunflower seeds… Use your creativity and do what makes your taste buds dance!

My experience with salads more and more has led me to understand that it is all about making it personal to you. It is ALL about the add-ins. Find a base that makes your heart sing – for me it is spiraled cucumber – and then add it all the veg, fruit, nuts and seeds that you love! Add a dressing you can become obsessed with and you are good!

That has been my trick at least, finding things I crave, things I become obsessed with, and riding those obsessions till the wheels fall off ‘em.

Spiralized Apple Fennel Salad
 
This salad is extremely fresh with crisp apples and crunchy fennel and bright lemon poppy seed dressing!

Ingredients
  • 1 green apple
  • 1 red apple (Pink Lady or similar)
  • 1 bulb fennel
  • ¼ cup Lemon Poppy Seed Dressing
  • ¼ cup dried cranberries
  • ¼ cup golden raisins
  • 1 tablespoon flax seeds
  • ¼ cup walnuts, chopped
Instructions
  1. With your SpiraLife Pro countertop spiralizer, use the large noodle insert to spiralize both apples.
  2. Using the ribbon insert, spiralizer the fennel bulb.
  3. Combine all the spiraled ingredients in a bowl and add the Lemon Poppy Seed Dressing. Toss with a pair of tongs.
  4. Add the rest of the ingredients. Toss again.
  5. Serve and enjoy!
